Beau Jo's Mountain Pies is more than just a pizzeria. It's a beloved Colorado institution, known for its massive, mouth watering pizzas and commitment to community. Chip Bair, the owner of Beau Jo's, talked with us about the restaurant's iconic status, challenges, and successes.

From Humble Beginnings to Statewide Success

In 1973, Idaho Springs, Colorado, featured a half-vacant main street that had yet to be paved. Still, Chip saw potential and purchased Beau Jo’s when it was a tiny 570-square-foot space with inconsistent hours.

Under Chip's leadership, the restaurant expanded, always focusing on fresh ingredients and exceptional customer service. Over the years, a stop at Beau Jo’s became a rite of passage for generations of Coloradans after long days of mountain adventure. Today, it boasts seven locations across the state and name recognition across the country.

Overcoming Challenges, Embracing Opportunities

Like all businesses, Beau Jo's has faced its share of challenges, especially in recent years. The pandemic forced the restaurant to adapt, leading to innovative solutions like the Miner Street Market, a lively pedestrian experience in Idaho Springs. Chip reflected on this, saying, "A lot of these challenges bring other opportunities that you have to be aware of and take advantage of."

Staffing shortages have also been an issue, but the business’s reputation for treating employees well has helped Beau Jo’s attract and retain talent.

"We take care of our people. We pay them well and give good benefits. We treat them like humans."

Safety in a lively environment

Workplace safety is a top priority for Beau Jo's, especially in the bustling environment of a restaurant. Cuts and burns are common hazards in the kitchen, but Beau Jo’s mitigates the danger by using enclosed cooking surfaces and putting age restrictions on equipment operation.

The dining areas present their own unique challenges. Busy days can lead to crowded spaces, increasing the risk of slip, trip, and fall accidents.

“Sometimes I think it wouldn't be a bad idea to have some traffic lights, but that's a little hard to do in a restaurant.”

Employees stay on their feet on slippery walking surfaces with proper footwear, regular maintenance, and a focus on awareness. In older locations like the Idaho Springs restaurant, the challenges are amplified with narrow staircases and uneven floors, but they have installed slip-resistant treads to ensure the safety of both employees and customers.

More Than Just Pizza: A Community Partner

Beau Jo's is deeply ingrained in the communities it serves. Chip's involvement in his adopted hometown of Idaho Springs is particularly noteworthy. He is proud of how the restaurant has contributed to the town's growth and revitalization.

"I’m most proud of how we've helped to grow and get our community of Idaho Springs working together in creating a nice place for people to live and visit."

He emphasized the importance of community collaboration and creating a sense of local pride.

A Look to the Future

Beau Jo's continues to evolve, embracing new initiatives like solar power and free electric vehicle charging stations at some locations. Chip's commitment to the environment and sustainable practices is evident, reflecting a vision for the future that goes beyond delicious pizza.

More than just a restaurant, Beau Jo’s is a Colorado tradition and a testament to the power of community, good food, and employee empowerment. As Chip aptly put it, "We're all partners in this."

The restaurant's enduring success is a testament to this philosophy. Whether you're a longtime fan or a first-time visitor, Beau Jo's offers a unique dining experience that goes beyond the plate.
